Skewered Steaks for a Crowd

Ingredients

  • Steaks:
    4 – Rib eye steaks 1” or thicker
  • Marinade:
    None

Directions

  1. Instructions:Rub both sides with extra virgin olive oil. Cover with salt, pepper.
  2. Start Po’ Man like usual, except after a majority of the coals are started place all the grill parts inside with the circular grate placed on level next to the top and put the lid on for about 5 – 10 minutes. Leave a big gap in the lid so the grill grate and drip plate get extremely hot.
  3. After 5 – 10 minutes of pre-heat take the lid off and hang 4-6 steaks per skewer from the narrow end and put a the lid on with a ½ – ¾ “ gap for approximately 25-40 minutes or until meats internal temp is 135 or higher. Steaks will be medium rare and super juicy!

**TIP** Remove the drip plate to allow the flame to barely hit the steaks. Doing so allows drippings to hit fire directly, so be careful of flair ups when lid is off.
