Ingredients
- Steaks:
Ribeye Roll OR Prime Rib (can buy with the bone in or bone cut off but tied back with butcher string) - Seasonings:
- Olive Oil
- Sea Salt, Black Pepper
- Rosemary
- Thyme
- Basil
Directions
- Rub meat with olive oil, and then generously coat with sea salt and coarse black pepper
- Lightly add rosemary, thyme, and basil
- Place grate on level 2 or 3 of standing rack and place rack in Po Man for approximately 10 minutes, leaving a wide gap in the lid to allow grill and grate to get really hot.
- Place Prime Rib on grate and add lid with a ¼ – ½ “ gap. Cook for 1:30 – 2:30 hrs, flipping meat over once during cooking time. Cook to internal temp of 125-135 degrees. Take out and drape in foil for 10-15 minutes before slicing.
