Po’Man Pork Chops

Ingredients

  • Pork Chops:
    4 – Thick cut Pork Chops  1” or thicker
  • Extra Virgin Olive Oil
  • Salt
  • Pepper
  • Char Crust (you can find at most grocery stores or online)
  • Marinade:

    • ½ cup Vinegar
    • ½ cup Italian Dressing
    • ¼ cup Lemon Juice
    • Mix all marinade ingredients

Directions

  1. Marinate Pork Chops for at least 2 hours.
  2. Remove from marinade, shake off excess, and pat dry with paper towel.  Rub both sides with extra virgin olive oil.  Cover with salt, pepper, a little Char Crust, and other spice favorites.
  3. Start Po’ Man like usual, except after a majority of the coals are started place all the grill parts inside with the circular grate placed on level next to the top and put the lid on for about 5 – 10 minutes.  Leave a big gap in the lid so the grill grate and drip plate get extremely hot.
  4. After 5 – 10 minutes of pre-heat take the lid off and place chops on grill grate. Close lid leaving about a 1/4” – 1/2” gap for about 20 – 30 minutes. Take off lid, flip chops once and put lid back on with same gap and wait another 20 minutes or so.  Pull chops and let rest for 10 or so minutes.
