Po Loin

Directions

  1. Using a 3-6 lbs loin.
  2. Marinate in ½ cup vinegar and ¼ cup apple juice.
  3. Season to your choice, (Charcrust is an excellent addition)
  4. Place on level:  2 or 3 with lid set at ¼ – ½”. Let cook for :40 – 1:00 hour then flip and let cook for another :40 -1:00 hour. Pull when internal temp is north of 145 degrees and wrap in foil for 10-15 minutes.

**TIP** This is a great cut of meat to baste or mop during cooking. A great mop is vinegar and apple juice with favorite spices added)
