Bacon Wrapped BBQ Shrimp

Directions

  1. Use 26 count or larger peeled and deveined shrimp, we usually use Jumbo or Colossal size. Season both sides with salt (lightly), pepper, Everglades or Tiger seasoning, garlic, and Old Bay (lightly).

  2. Take bacon full length and cut in half. Cook the bacon shy of crispy, do not overcook. The bacon needs to be still flexible enough to wrap around shrimp and finish cooking in the Po Man. If you wrap shrimp with raw bacon, the shrimp will be fully cooked well before bacon is cooked.
  3. Wrap shrimp with bacon and pierce with tooth pick. Cover with favorite sauce and place shrimp on grate on level 3 or skewer and hang. Continually baste with BBQ sauce during cooking until shrimp is 120 degrees
